And honestly, color correction is not hard. At all.

Learn the fucking color wheel, learn what different schemes work well together, pay attention to the subtle colors present in your clip and enhance those, perhaps adding one or two more.
Some basic saturation will go a long way.

If he was unclear, you have to go in the seperate video properties and uncheck Maintain Aspect Ratio.
If you don't want to stretch it, you can do it in Event Pan/Crop by setting the preset to 16:9.
And check the "Stretch video to fill output frame size(do not letterbox)" box in render settings.
